Pitting the produce we enjoy during the summer against colder season options may seem to be an unfair fight in favor of the bounty of the warm weather months. After all, summer gives us the juiciest tomatoes, the sweetest corn, and more zucchini than we can eat. And then there's the fruit. Oh, the fruit.
In comparison, the sturdy, assertively-flavored counterparts that flourish in the fall and winter, namely every cruciferous vegetable known to man (Kale, cauliflower, Brussels sprouts — I'm looking at you.), seems muted, bitter, and tough. I can say these things about those vegetables because I love them dearly and for all the reasons I listed. But they are only a glimmer of the producer the drop in temperature offers up. Amongst the fields of kale and heads of broccoli and cauliflower live one of winter's most precious, sweetest seasonal offering: the parsnip.
